Pizza Base making Process

An old family recipe the tastes like quality and traditional flavors.

A FAMILY TRADITION

The dough is made by using live yeast (lievito madre) flours, salt and water and is ready for preparation when it has reached 26°/28° and has risen to a perfect satin like consistency.

In addition to using the finest ingredients we can source,
we do not use preservatives of any kind.

This is then pre cooked for circa 2 minutes at 300°c. it is immediately chilled as it exits the oven to prevent growth of harmful bacteria and vacuum packed.

The process of vacuum packaging removes air and prevents its return by an airtight seal surrounding the food within the packaging material. with modified atmosphere or ‘gas’ packaging, air is replaced by a strictly controlled mixture of gases such as carbon dioxide, oxygen and nitrogen.
